Cherries are picked every 21 days at peak ripeness, then floated and hand-sorted to remove defects before being placed on raised beds to drain excess water. Around 14 hours later, the coffee is de-pulped and left to dry ferment for an average of 36 hours in oak tanks. It is then rinsed four times and left to drain in plastic bags for a further 10 hours.
