Processing: Anaerobic natural, yeast, thermal shock
- carefully picked at 21 to 24 degree brix
- aerobic fermentation as cherry for 48h, rinsed juice is circulated repeatedly over the cherries
- soaked in cold water, floaters are manually removed
- thermal shock with 50°C water to loose cell structure of cherries to kickstart fermentation
- ph and temperature monitoring anaerobic process before tanks are closed yeast is added
- Mechanically dried to 18% moisture content.
- Stabilized for 2 days in dark room
- Finish drying for 15 days till a moisture content of 10,5-11.5%

For sure our loudest coffee right now. Super boozy, super funky, vibrant. Expect a super high complexity around a red fruit profile and very delicate florals in the aftertaste. Saying that we are not wondering why this coffee of Nestor Lasso has seen so much stage time in numerous comps. Both as espresso and filter.
Beware. Due to a high level of processing this coffee is very soluble. Either brew with a corse grind setting or even use a bypass to not over extract this one.
