• The coffee is processed using an ecopulper.
• Drying takes place on patios for 18–20 days.
• During drying, the coffee is periodically piled and spread to ensure even moisture loss.

When brewing, aim for clarity and gentle extraction rather than intensity. A moderate brew temperature around 92–93°C supports sweetness while highlighting the acidity. A medium-fine grind and a total brew time close to three minutes will help maintain elegance and transparency. Gentle pouring with minimal agitation preserves the coffee’s delicate character.

For example, you can subscribe until February 1st for the February subscription. Any subscriptions made after the 1st will automatically start in the month after next.
