The Chiroso variety is a wild type discovered in Urrao, Antioquia, Colombia. Its name, meaning “big” or “bumpy,” is inspired by its resemblance to achiras, a traditional Colombian cookie with an imperfect shape. DNA analysis has revealed that Chiroso has Ethiopian roots, which help explain its distinctive flavor profile, combining characteristics of both Ethiopian and Colombian coffees. Like the renowned Geisha variety, Chiroso is often associated with spicy, cardamom-like qualities, tropical fruit flavors, and delicate floral notes.

The cherries are selectively harvested and brought down from Finca El Jardin to the La Roca processing plant in Planadas, where they are floated to remove underripe and underdeveloped cherries, as well as leaves and sticks. The selected cherries are then placed directly into sealed blue barrels and left overnight for 24 hours. The coffee is subsequently depulped and undergoes a second 24-hour fermentation with the mucilage intact before being thoroughly washed.

After washing, the parchment coffee is transferred to raised drying beds under marquesinas (greenhouse-style drying houses), where it is carefully moved 2–3 times per day to ensure even drying. The coffee is dried for approximately 17 days before being milled at the Desarrolladores de Café facility.

We taste: expect a juicy and elegant cup with bright, sparkling acidity and vibrant papaya and cherry notes. The two-step fermentation enhances the fruit expression and adds body, while the washed processing keeps the cup clean and precise. A beautiful example of Chiroso that combines Ethiopian heritage with the unique terroir of Planadas, Tolima.

Brewing notes

This coffee is easy to brew. We recommend allowing the beans to rest for at least 21 days to days from the roast date to reach peak flavor.

We recommend a coarser grind and a ratio between 1:16 to 1:17. Aim for lower extraction to highlight the floral qualities of this coffee.
