Processing: dry fermentation, washed

• Harvesting: Cherries are harvested every three weeks.
• Cherry Fermentation: No fermentation time in the cherry.
• Pulping: The coffee is pulped and left to ferment for 40 hours in a dry state in a mayolica tank before being washed.
• Drying: It is taken to the drying area for 15 to 20 days after washing.

Flavours: lemon kefir, lavender, champagne, lilac, green apple, fizzy natural wine.

One little hint on how to approach this coffee: This coffee has many different faces, try different approaches from smaller to wider ratios - thick bodies with almost lemon kefir associations to very elegant natural wine like cups with floral attributes like lavender and a lilac aftertaste.
