Processing: Honey

• Harvesting: Manual selection of ripe cherries, ensuring only the highest quality beans are picked.
• Flotation: Cherries are floated in water to remove defects and low-quality beans.
• Oxidation: After flotation, cherries are placed in sacks and left to oxidize for 24 hours.
• Pulping: Cherries are pulped, leaving mucilage intact on the beans.
• Fermentation: 24 hours in water with native leachates (microorganisms from the farm), contributing to flavor development.
• Drying – Marquesina: 12 days in a covered drying bed under controlled sunlight and ventilation, allowing gradual and even drying.
• Drying – Silo: Beans are then transferred to a silo, drying at 38°C with resting periods to ensure even moisture reduction and preserve quality.

This Java reveals its character beautifully across different brew ratios. At a wide ratio of 1:17, the cup opens up with delicate and floral notes, offering a light body and a refined aromatic profile. When brewed tighter at 1:14, it transforms into something richer and more tropical — full-bodied, sweet, and vibrant, with lush fruit tones. Exploring between these ratios allows you to find the perfect balance between elegance and intensity.

• Initial Order: Charged immediately upon signup.
• Recurring Orders: Billed on the 1st of each month.

Cancellation
You can cancel your subscription at any time before your next billing cycle to avoid being charged for the upcoming month. Cancellation requests made on or after the billing date will apply to the following month.

Initial orders are charged immediately. You now have until the 1st of each month (inclusive) to sign up for the following month's subscription. For example, you can subscribe until February 1st for the February subscription. Any subscriptions made after the 1st will automatically start in the month after next.
