• Cherries are selectively picked at peak ripeness and floated to remove defects.
• The coffee undergoes a dry fermentation of approximately 30 hours.
• It is then dried on patios in full sun for 12–15 days.
• Once dried, the parchment is stored in plastic bags until milling.

Best brewed with a slightly gentler extraction due to the relatively low density. Using water at 90–92 °Chelps maintain clarity and sweetness. With tighter ratios, the cup presents a dense, candy-like sweetness with ripe raspberry and nectarine notes, while opening the ratio gradually lifts the profile towards hibiscus-like florals and a lighter, more elegant, almost gesha-like expression. A medium-coarse grind and calm, even pours support a clean structure, allowing the cup to move seamlessly from juicy and sweet to floral and refined.
