Processing details:

• Ripe cherries are selectively harvested and floated to remove defects.
• Depending on the harvest period, the cherries undergo oxidation in cherry for two nights (resting phase).
• The coffee is then depulped and dry fermented in open tanks without water for 48 to 72 hours, depending on ambient temperature.
• After fermentation, the coffee is fully washed.
• Drying begins in full sun for the first few days and continues under shade thereafter.

We taste: A beautifully floral, terroir-driven Typica with delicate aromas of chamomile and Greek mountain tea. This coffee develops a beautiful depth, with a juicy acidity reminiscent of ripe blackcurrant and pears. A r fig-like sweetness creates an incredibly long and lingering finish. As the coffee cools from hot to cold, a pleasant, delicate spiciness emerges in the aftertaste, bringing back the herbal notes of chamomile and mountain tea.

We recommend a coarser grind (27–30 clicks on the Comandante C40) to highlight the coffee's floral qualities and bring out a character reminiscent of Ethiopian coffees.

Despite its high density, this coffee is relatively soluble and tends to overextract. Aim for a lower extraction with a simple one- or two-pour structure, a water temperature of 90–92°C, and a total brew time of 2:00–2:30 minutes. Adjust by taste.

For water, we generally recommend a total mineral content of 80–120 ppm, with 20–30 ppm of potassium bicarbonate (KHCO₃) and equal parts magnesium chloride (MgCl₂) and calcium chloride (CaCl₂).
