- removing impurities by washing with water
- dried for 8 days though which they are removed 4 times a day for homogenity
Flavor palette: elegant, creamy, tartaric acidity like riesling, peach ice tea, ripe grapefruit, overall pink and red fruit associations.

Reading the flavors we can perfectly see the dedication and expertise Alexandra is putting into her work. We immediately knew we want this coffee when drinking it the first time because it brings something rare to the table:
This coffee perfectly bridges between heavy, fermenty coffees and the cleaner ones. Overall it is very comforting by its smooth, creamy texture has out of the box flavors, yet Pink Bourbon characteristics are still detectable. it has something from both worlds which is maybe something the coffee world needs.
In the end, coffee is not black and white in terms of clean or funky. Some like pronouned terroir, some like funk. We mainly like both as long as it is done well. And this coffee symbolizes this a bit. We chose to develop it a bit further to pronounce the funkier qualities. If we added less development when roasting, this coffee has a lot of washed Ethiopia vibes. Maybe something we could theorize on within a cupping or so.
