- manually picking ripe cherries
- desinfection of unwanted bacteria

- 90 hours fermentation with an added yeast similar to one growing in sourdough
- coffee is being pulped and washed
- decaffeination process trough enzyme naturally occurring in the pulp of coffee cherries itself
- immersion in the decaffeination solvent for 48h (more fermentation is happeing)
- after a final wash beans are dried for another 8 days

Description
We are honest with you. When we heard of a decaf that won the US Brewers Cup we were super curious. After having it on the cupping table super high expectations were met. This coffee is insanely good and on top a bit of competition history. We wanted it badly. Did we mention the coffee also competed on the world stage at the WBrC 2024.
Expect a very (red) fruit forward coffee with a very unusual flavor palette and an unexpected cleanliness yet high intensity and sweetness. We taste ripe cherry, red florals like hibiscus and rose and a very unique eucalyptus aftertaste. The acidity is malic when warm and tartaric when cooled down.
Don't forget coffees loose a bit when being caffeinated. We would consider updosing thisby quite a bit. Our go to recipe for this coffee is 250ml with 18gr in 5 pours with a rather coarse grind setting.
