Processing: cold fermentation washed
- Harvesting: Coffee cherries with 28 degrees Brix are harvested.
- Sorting: Floaters (cherries with ripeness issues) are removed.
- Depulping: The cherries are depulped immediately.
- Cold Fermentation: Depulped coffee is placed in GrainPro bags and refrigerated at 10-13°C for 76 hours.
- Washing: After fermentation, the coffee is fully washed.

Drying:
- Sun-dried for three days in a solar dryer.
- Moved to raised beds in the shade for 23-25 days of drying.
- Resting: Dried coffee is stored in GrainPro bags for 20 days of rest.

Description
When we had this coffee on the table we thought we got something a bit like all these thermal shock kind of coffees (as the processing may tell), yet different. And this was super interesting. It lacks the typical ice tea mouthfeel of a thermal shock that those kind of coffees usually have. Feels rather like a classic washed coffee does with a vibrant acidity structure but the flavor is very unusual: Intensely citric, overall very fruit forward and the aftertaste with a intense tartaric acidity reminding us of glazed ginger. Super complex and a journey to remember. Also we were astonished by the uniformity and how it roasts. Literally all profiles we have had were drinking interestingly and there was no better or worse. In the end we decided to go for a rather lightly roasted profile since it emphasizes classic pink bourbon characteristics of florals tea likeness. Clean yet super komplex for all washed coffee fans out there! Though it is super sweet we decided acidity should be the protagonist here.
