- Ripe cherries are harvested with zero tolerance for immature green coffee.
- After harvesting, a second manual selection of cherries is done to remove green beans and immature ones.
- A "Pre-cherry" process is carried out where the selected cherries are submerged in water to maintain a temperature between 15 and 20 degrees Celsius and
"float" the low-density beans for 24 hours.
- After 24 hours, the drying process begins with an initial rapid dehydration of the cherries, done mechanically for a period of 8 hours at a temperature of 40 degrees Celsius.
- After 8 hours of cherry dehydration, a resting period follows where the cherries are left at room temperature.
- Then, the cherries are sun-dried in canopies until they reach 11% moisture. In this stage, there are periods of sun exposure for 8 hours and resting periods for 12 hours. The drying stage takes about 15 to 20 days.

We’ve secured a rare gem from Colombia that we’re thrilled to share with you. The coffees of Julio Cesar Madrid are celebrated worldwide for their extravagant flavour profiles, made possible through innovative processing techniques on his farms, Finca Milan and Finca La Riviera.
Sudan Rume is an ancient coffee variety, first cultivated on South Sudan’s Boma Plateau. While it’s not widely grown commercially due to its low productivity, Sudan Rume boasts strong resistance to Coffee Cherry Disease and Coffee Leaf Rust, making it a valuable asset in breeding programs. One of its most famous descendants is the SL-28 variety. When cultivated commercially, Sudan Rume is prized for its exceptional cup quality and rarity.
The result is a vibrant and highly complex cup. Expect a juicy mouthfeel reminiscent of mango and cantaloupe melon, complemented by delicate notes of mint and anise. This coffee is undoubtedly one of our highlights of the year!
