Processing: Carbonic Maceration, Natural

  • Harvesting: Ripe coffee cherries are harvested.
  • Sorting: Floaters (cherries with ripeness issues) are removed.
  • Carbonic Maceration: Coffee cherries placed in fermentation tanks, flushed with CO2 and stored in a cold Room for 12 days. - This enables a slow and controlled anaerobic fermentation at low temperatures.
  • Drying: Afterwards, the cherries were dried as a Natural, in thin layers on breathable beds to ensure controlled drying.

Flavors: high acidity, blackberry, ripe pineapple, tropical fruits, intese flavour, complex, umami like flavour of soy sauce.

Description

This coffee has a very special background to us. When we started getting ourselves lost in the specialty bubble the Kaffeemacher:innen‘s enourmous knowlegde shared on their platform was our way to meet our high demand. We learned a lot through them and always looked up. Still today (with much better understanding for the coffee world) they keep impressing us with their profound, transparent and non flashy approach of making the coffee world better than it was yesterday. Today we are happy to call them friends. 

This coffee is from their farm Finca Santa Rita in Nicaragua. We got to know each other through the competition world and coffee festivals and they were happy to share some super small yet super unique lots with us which were not worth to be released through them due to its small size (this coffees harvest is a total of 6,5kg). So for us it is a match. 
We are both very excited and honoured to share this unique flavour profile.

About this coffee as it is a less well known Arabica-Variety. It is a Marsellesa, the result of its genetical parents Villa Sarchi and a Timor Hybrid. It is known for its rather medium+ cup quality and for a high acidity potential (Yeeees!) This both matches super well with the intense processing: 

It is processed as a CM natural (for details see processing). This results flavourwise in a very intense acidity structure of a dark red fruits profile with a crazy umami finish. We find cassis, hibiscus, black tea and light soy sauce. Usually when I read such info I would think of an adstringent, boozy, big natural, but actually the body (brewed on a classic 1:16,6 Ratio) is rather tealike and (kind of) clean till the very end. It is unlike anything we have had so far, maybe it reminds us a bit of Nestor Lassos Ombligon stylewise. But it is different in flavour. All in all an example of very precise high level professing.
