Processing

  • Harvesting: Every coffee cherry is carefully handpicked to ensure only the ripest cherries are selected, preserving the quality and flavor potential of the lot.
  • Sorting: After harvesting, the cherries undergo an extensive selection process at the wet mill. Here, defective or unripe cherries are removed to maintain consistency and enhance the final cup profile.
  • Bridazul: Once sorted, the coffee is floated to separate lower-density beans. The selected cherries are then delivered to Bridazul, where the fermentation process is meticulously managed to create a distinct and flavorful experience.
  • Fermentation: The whole cherries are placed in oxygen-deprived containers inside a temperature-controlled environment. This lot undergoes six days of fermentation under carefully monitored conditions, intensifying the coffee’s fruity flavors and adding complexity to the profile.
  • Drying: After fermentation, the cherries are dried on shaded African beds, ensuring slow, even drying. The cherries are stacked only a few layers deep to retain their fruit intensity while developing a refined tactile experience in the cup.

Flavors: crisp acidity, gooseberry, elegant, grapejuice, delicate, cane sugar, blackcurrant associations. Some tropical hints of guabana and lychee.

Description

Heya! This another tiny lot form the Kaffeemacher:Innen which we are super happy to roast. Again: Thank you so much for sharing this.

A pretty rare variety if to be found in Nicaragua, El Salvador and Brazil. Its non resistance to leaf rust may be a reason(?). It is a natural hybrid from Maragojipe and Caturra (Maragojipe is known to be very low yielding, maybe another reason?). I do not know why but if something is rare, it has something for me. And around this variety there is even memes on the internet like: Go away with your thermal shock triple whatever and just give me a washed Maracaturra. Eversince seeing those it got me super curious. (Couldn’t find it, does someone know?).

We can tell you we didn’t want to share this coffee only because the variety is a rare thing. Exactly this lot also has a very high quality giving it a super intresting cup profile which is very terroir focussed. We find an overall fruit forward medium+ complex profile with a floral ending and an overall creamy almost silky tactile. The creamy part reminds us a lot of what to find in Maragojipe yet the acidity structure is much more intresting in this one which makes sense in terms of the Caturra genetics (funnily we continuously have Kenian vibes when drinking is coffee. With the overall Typica and Bourbon genetics like SL34 it kind of makes sense kind of (if you still reading you are a real coffee nerd!)

Ok back to topic. In this coffee expect a crisp elegant mainly citric (tartaric when cold) acidity structure and as mentioned a creamy/ silky body with a lot of sweetness (depending a bit on the ratio). The flavour is very fruit forward reminding us of gooseberry, grape juice and cane sugar. But black currant associations like our favorite Kenyans out there aren’t far off. It is just a bit cleaner and more delicate overall.
We think this coffee is an absolute banger for everybody, especially for a niche group of coffee drinkers. If you are still reading, this may be just right for you.
