Processing:
- Ripe Fruit Selection: Only ripe fruits are picked to ensure high-quality coffee with optimal flavor and aroma.
- Cleaning and Disinfection: The beans are cleaned and disinfected with treated water to remove impurities and microorganisms.
- Density Selection: Beans are immersed in water, where high-density beans sink and low-density ones float, separating quality beans from defects.
- Thermal Shock: Beans are treated with 80°C water for 20 seconds, then cooled rapidly to break down sugars and pasteurize them, enhancing flavor.
- Pulping and Adding Sugars: Beans are pulped, and sugars from the removed pulp are added to improve the flavor profile with sweet notes.
- Fermentation: Beans undergo 120 hours of fermentation, breaking down sugars and affecting flavor and acidity. Preferments may be added for unique characteristics.
- Drying: The beans are sun-dried for 15 days to reduce moisture and develop flavor for long-term storage.

You guys remember the Bourbon Pimienta from last summer (was sold out fast)? This coffee is nothing short of being at least equally amazing. No wonder. Los Nogales for many years already is a farm which is operating on the very highest level. Repeatedly their coffees can be found within the comp scene and in portfolios of top tier roasters.
It is a bit hard to get started since there are so many things around why this coffee amazes us. The cup is complex and layered and pretty unique in terms of flavor. It gets very creamy, the acidity is more tartaric and phosphoric, especially when cooling down reminding is of cream cheese and red berries like raspberries. Still florals can be found here. We discussed a lot if to give it the flavor of NY Cheesecake. Maybe a bit sensational but we felt like it fits super well in that sense. We even asked friends if they felt like that was bullshit but they agreed.
Another reason is what you can read in between lines already. It is very easy to brew since all its different facets are beautiful. This leaves it up to you if you prefer a more intense brew or something more delicate.

One little hint on how to approach this coffee: When brewed with a wider (1:17) ratio, the coffee is very Gesha like, giving us a silky mouthfeel and bright florals together with a citric acidity and a delicate sweet body reminding us of many lemony things from the patisserie. With a more compact ratio of 1:15-1:16 it looses these qualities a bit but instead it gets pretty intense giving us a lot of the Bourbon Pimienta like qualities.
