Picking:
Pickers focus exclusively on harvesting ripe cherries at full maturity to ensure optimal sweetness and flavor potential.
Sorting:
Harvested cherries are washed with treated water to remove dirt and impurities, then submerged to separate by density. Dense, ripe cherries sink while lighter or unripe ones float. Additional hand sorting ensures uniformity and quality before fermentation.
Fermentation:
The cherries are briefly submerged in 80 °C water for 20 seconds to pasteurize and release sugars. Beans ferment for five days in their own sugars extracted during pulping, with a small addition of pre-fermented yeast cultivated from previous batches of the same variety. This controlled process enhances complexity while preserving terroir clarity.
Drying:
Post-fermentation, beans are sun-dried on raised African beds for around 15 days until reaching the ideal moisture level for storage, ensuring slow, even dehydration and flavor balance.
Stabilization:
After drying, the coffee rests for 15–30 days in GrainPro bags, allowing moisture and flavor to stabilize and harmonize for optimal cup quality.
Flavours: Orange Blossom, Lemon Tarte, Oolong Tea, citric acidity which is juicy and balanced. finished by herbal lingering aftertaste.

The Yellow Bourbon variety naturally leans toward notes of yellow fruit and flowers, known for its smooth, bright acidity and a deep, inherent sweetness.
At Los Nogales, they have a gift for enhancing these natural traits without overshadowing the coffee's true character. In this cup, you get a burst of yellow-toned flavors: think sweet lemon tart. The acidity is vibrant, like tartaric grapes and ripe citrus, all balanced by that Bourbon sweetness.
What really stays with you is the finish, long, surprisingly smooth with a herbal note that reminds me of a milky oolong tea. A quick word to the wise: this coffee is potent and extracts easily. A slight over-brew can push that finish from silky to sharp, so mind your timing.

This coffee has an open cell structure again, thanks to the processing. By adjusting the ratio, you can experience a creamy to juicy body and rich citrus qualities, which change into beautiful floral qualities with a wider ratio. We recommend using soft water with a general hardness of up to 140 ppm and a Comandante grind setting equivalent to 26–29 clicks.
