Picking:
Cherries are selectively handpicked at full ripeness to ensure optimal sugar development and aromatic potential. Careful harvesting is essential, as the dry process relies entirely on the quality and uniformity of intact fruit.
Sorting:
Immediately after picking, cherries undergo flotation and visual inspection to remove underripe or defective fruit. Additional hand sorting is performed during the early drying stages to ensure consistency and prevent fermentation defects.
Fermentation:
Fermentation occurs naturally inside the intact cherry during the drying process. No water is used at any stage, allowing sugars from the pulp and mucilage to migrate gradually into the bean. This slow, internal fermentation enhances sweetness, fruit depth, and aromatic complexity while maintaining clarity and balance.
Drying:
Cherries are placed directly onto African raised beds and dried under the sun for approximately 12–17 days, depending on weather conditions. Drying continues until around 14% moisture, after which the coffee is finished slowly in mechanical dryers to 11–11.5%. Low heat and high airflow are used to ensure even drying to the core, with rest periods applied when necessary.

Introducing Chicho Gallo, another standout from Finca Hartmann, and an exceptional journey into Panama’s evolving specialty landscape. Chicho Gallo brings depth and warm characteristics, and a wine-like sophistication dressed in this beautiful Panama terroir.
Originally brought to Panama in the early 2010s from Ethiopia’s Amaro Gayo region, this landrace variety carries the genetic complexity and floral heritage of its Ethiopian homeland into the rich soils of Chiriquí.
The name itself carries a story. An homage to the Hartmann family and a symbol of their long commitment to varietal diversity and experimentation. Amaro Gayo being trademarked they renamed this variety after Ratibor Hartmanns father Chicho who passed away at the time.
In the cup, there is a bright grapefruit like acidity with a tart sweetness. This is complemented by notes of blueberries and stonefruit that add depth and complexity. Cherry and orange blossom appear as subtle fruity and floral notes rather than dominant aromas. The body is intensely creamy, and the finish is long lasting and smooth, balanced, and clean, with lingering fruit and light floral tones reminiscent of jasmine. All very similar to an Ethiopian natural in the best way.
