The Pink Bourbon from Manantial Estate is refined and floral, with a delicate structure. Its cup profile is defined by hibiscus, coffee cherry, red fruit, and ripe grapefruit, delivering clarity, gentle sweetness, and a light, elegant finish.
The Chicho Gallo from Ojo de Agua presents a deeper and more layered natural expression. Alongside grapefruit-like acidity, blueberry, stone fruit, cherry, orange blossom, and jasmine, it develops tart sweetness and a creamy mouthfeel, with a long, clean, lightly floral finish.
Both coffees are processed as naturals, fermented inside the intact cherry without water contact, and slowly dried to preserve sweetness and aromatic precision. Together, they offer a direct comparison of two varieties and two flavour profiles, united by meticulous farming and processing.
