Description
This coffee is a beautiful example of experimental processing done really well. What we really like about this coffee is two things that depend on each other.
1. The coffee has a very unique flavor palette which is achieved through meticulous and complex processing.
2. The coffee appears still rather clean, which is a surprise after the smell of intense herbals that emerges when brewing.In the cup you will find lots of red fruit components paired with a taste very unique taste of eucalyptus which surely is the protagonist of this coffee. Also you will have a high sweetness and a medium tartaric acidity which together can be very punchy when brewed with low bicarbonate water.Overall a great example of new school processing done very well lifting a coffee to a new level of complexity.
