SIDRA LAS ASTURIAS AUGUSTO ORTEGA

Altitude: 1680 masl.

Processing: dry fermentation, washed

  • Cherries are picked every 15 days when they reach peak ripeness.
  • They’re left to ferment in cherry overnight before being de-pulped the next morning and undergoing a dry ferment for an additional 32 hours.
  • The seeds are rinsed of remaining mucilage and then spread to dry on raised, shaded beds for 20-22 days.

Flavours: raspberry yogurt, maracuja, cherry coke, white florals, red currant.

Description

Not hard to see we love Sidras! Comparing our last harvest washed Sidra from Esnaider #018 to this one from Augusto #027 they couldn’t be more different in the context of 2 washed coffees. This is super intresting to see. You guys who had #18 definitely have to try this one.The two farms are pretty close to each other and both are washed. The processing protocols are slightly different but nothing crazy or far away. This may show how local naturally occurring yeasts make a huge difference (?) (bold claim :D. In any case, beautifully nerdy comparison.

With this coffee you can expect an intense cup for a washed. A lot of red fruits all the way and tropicals in the brew together with a vibrant acidity which increases when cooling down. Reminds us of cherry coke. The mouthfeel is surprisingly creamy and feels almost like Joghurt when cooling down. With a compact recipe (like 1:15-16) this shows even more! We prefer it more with a ratio of 1:17 since the intensity is already high.

Also we want to add (props, if you are still reading) one: Do not get tricked by the flavor descriptors, if you are looking for funk. This coffee has a washed profile, an unusual one, but no "natural" funk. Just saying since we do not want to disappoint anyone :)
