Picking: The cherries are handpicked at a ripeness exceeding 23° Brix, ensuring high sugar content and optimal flavour development. Initial hand-sorting is carried out on the farm to select only the best cherries.
Sorting: Upon harvesting, the cherries are soaked in water for five hours to clean and sort them by density. This step ensures only fully ripe and high-quality cherries proceed. Further manual sorting is conducted both on the farm and during the milling stage.
Fermentation: The process begins with an initial carbonic maceration of the whole cherries for 96 hours. The cherries are then de-pulped, with all the mucilage left intact. A secondary anaerobic fermentation follows for 48 hours, during which the coffee’s own mosto (the fermented juice from the cherries) is recirculated. This mosto is enriched with HS&F yeast (Saccharomyces cerevisiae), amino acids, and glucose to enhance microbial activity and complexity in the cup.
Drying: After fermentation, the coffee is slowly dried on African raised beds, using 100% sun drying. The drying period lasts 10 to 15 days, depending on weather conditions, to ensure an even and gradual moisture reduction.

Grown at 1,750 metres above sea level, this microlot is the work of Edwin Noreña – a respected Q-Grader, COE judge, and one of Colombia’s most passionate and innovative coffee producers.
This cup is a sensory journey: it opens with sparkling notes of yuzu and crisp apple cider, followed by layers of tropical pineapple and sweet spice – cardamom and cinnamon dancing together in perfect balance. A delicate whisper of sage rounds out the experience, adding depth and complexity. The body is silky and refined, with a vibrant acidity that lingers elegantly.
Behind the cup is not just skill, but vision. Edwin combines decades of coffee expertise with a deep connection to his land – Campo Hermoso has been in his family since childhood. His dedication to quality is evident in every step of production, from careful cherry selection to thoughtful post-harvest techniques.
