Processing: Natural Carbonic Maceration, 48 hours fermentation
Picking: Handpicked during two harvest seasons (May–June & October–November), with careful selection to maintain high quality.
Fermentation: After initial oxidation phase, cherries undergo carbonic maceration in tanks.
Drying:The coffee is dried slowly in cherries on raised African beds for 40 days to ensure consistency and flavour clarity.

Description
Our first coffee from Ana! We got in contact with her coffees due to a friend who imports a lot from her and got interested because of its beautiful, silky texture which is kind of rare to find with heavy processed naturals. Reminded us a lot of the big naturals from Panama. Cenicafe is a varietal created in a lab with good agricultural characteristics . It is leaf rust resistant and high yielding and from a sensorial standpoint known for high cup qualities (high in body and sweetness and due to its Caturra roots a vibrant acidity potential.
In the cup you will find a lot of red fruits character and an overall silky mouthfeel with a pretty high intensity yet surprisingly clean. When hot it reminds us of pomegranate juice and ripe strawberry. Especially when cooling the texture is reminiscent of mango, super smooth and rich. Also a black tea finish kind of as a second layer is there always present in the finish. What surprised us the most and why we think this coffee is super nice is the fact that it balances a pretty high intensity with a clean finish and has that is has a lot of depth in flavour. Beautiful cup!

Worth mentioning here this coffee is very soluble and tends to extract fast. We liked it the most with a 1:17-1:18 ratio since here the intensity was very pleasant for us. Depending on your setup we recommend adapting your go to recipe towards that direction, be it a slightly coarser grind of less agitation etc.
