SL28 – PASTOR ORDOÑEZ
Variety: SL28
Farm: El Placer
Location: Las Chinas, San Agustín, Huila, Colombia
Altitude: 1800 masl
Farm size: 4 hectares
Process: Washed
Processing details:
Cherries are picked at peak ripeness, then left for 8 hours in sealed bags before being placed in the hopper and left for another 12 hours. The cherries are then released through the de-pulper and left to dry ferment for 36 hours. The coffee is then washed 3-5 times and moved directly to raised drying beds. The coffee dries for between 18 days to one month, depending on the sun exposure. When the sun is very strong, a sliding roof is moved over to give more shade and slow drying.
Flavours: A crisp red currant acidity is complemented by delicate floral notes of hibiscus, balanced with a structured sweetness reminiscent of panela. The cup finishes with a refined black tea character, while subtle hints of rhubarb add complexity and bring an overall “Kenyan profile” vibe.
Description
Description
Again a SL28 - not from Kenia. Having the second SL, you can tell we really like this variety. Again a washed. Again very terroir focussed and a super clean and bright cup.
There are some coffees coming from Kenia that could be compared to this cup. Do you those Kenians that give you red and pink fruit associations like rhubarb and florals? It is a lot like that. This coffees mouthfeel is melting on your tongue with no edges as we like to say. Super clean and depending on how dense you brew it is moves somewhere between juicy and silky. The flavor is bright and fruit forward, but not in an intense way. It has a very elegant and a floral aftertaste like hibiscus. Not flavor wise but style wise it gives you Gesha vibes. The acidity is mainly citric and fresh, also not overwhelming but with a super pleasing intensity. Next to the floral character you will find a lot of currants in the cup (especially with denser ratios brewed they take over) which is why I like this coffee in a 1:17 ratio. It is so subtle and elegant. But 1:15 works just nice as well if you prefer more intensity. Even tried this coffee as espresso and it was beautiful with a 20IN, almost 70OUT in like 15s. Beautiful!
Thank you pastor for this coffee. It is one for every day yet something truly special! We are in love. Cheers.
Brewing Notes
Brewing Notes
The acidity is mainly citric and fresh – never overwhelming, but carrying a super pleasing intensity. Alongside its floral character, you’ll find plenty of currants in the cup. With denser brew ratios these fruit notes become even more dominant, which is why this coffee shines at a 1:17 ratio: subtle, elegant, and refined.
If you prefer more intensity, a 1:15 ratio works beautifully too, giving more weight and presence in the cup without losing balance.
We also experimented with this coffee as espresso – pulling 20g in, ~70g out in around 15 seconds – and the result was stunning: bright, juicy, and delicate, yet still structured.
