Processing: Honey

  • Harvesting: Manual selection of ripe cherries, ensuring only the highest quality beans are picked.
  • Flotation: Cherries are floated in water to remove defects and low-quality beans.
  • Oxidation: After flotation, cherries are placed in sacks and left to oxidize for 24 hours.
  • Pulping: Cherries are pulped, leaving mucilage intact on the beans.
  • Fermentation: 24 hours in water with native leachates (microorganisms from the farm), contributing to flavor development.
  • Drying – Marquesina: 12 days in a covered drying bed under controlled sunlight and ventilation, allowing gradual and even drying.
  • Drying – Silo: Beans are then transferred to a silo, drying at 38°C with resting periods to ensure even moisture reduction and preserve quality.

Description

We got the feeling the Java variety is a bit of a niche one in between others that belong to the what we call the boutique varieties like Gesha, Sidra, Sudan Rume, etc. (essentially the ones being present on comp stages all the time, because they win). All of those yield common characteristics. One could say they benefit from the same beauty ideals for which all of us coffee nerds love them so much: Smooth mouthfeel, well structured acidity, often floral notes, super balanced and always bright character in terms of flavor associations. Obviously all very dependent from the processing but still. All of them mostly low yielding and thriving at high altitudes. And the Java variety is capable of exactly that. Genetically coming from Typica with a rather low yield factor and not susceptible to leaf rust it is a perfect solution for smallholders. With its signature elongated shape the variety has the capability of a very high cup quality with the focus on a super smooth body and a delicate calm acidity structure. Flavorwise we find a lot we find a lot in a washed Ethiopia. Florals like Jasmin, stone fruit, citric, tea like finish. Just like this gem from Newerly Gutierrez at Finca Monteverde.

We chose to buy this coffee because it it sooooooo silky and creamy in the mouthfeel (depending a bit of the ratio you brew it with). Next level no edges to be found. This may be the result of the honey process. It is just a bit richer than a regular washed coffee but you won’t find any fermentation focussed flavor. The richness gives you mango-juice vibes from hot to cold. Surely the protagonist of this coffee. Also you find a lot of stone fruit and florals, especially when hot. When cold the coffee gives you a green tea finish. The acidity is mostly tartaric all the way and a bit citric when hot. Guys enjoy this coffee and thank you so much, Finca Monteverde for this gem!

Brewing Notes

This Java reveals its character beautifully across different brew ratios. At a wide ratio of 1:17, the cup opens up with delicate and floral notes, offering a light body and a refined aromatic profile. When brewed tighter at 1:14, it transforms into something richer and more tropical — full-bodied, sweet, and vibrant, with lush fruit tones. Exploring between these ratios allows you to find the perfect balance between elegance and intensity.
