Picking:
Cherries are selectively handpicked at peak ripeness to ensure high sugar concentration and aromatic clarity. Only fully ripe fruit is harvested, as uniformity is essential for a clean and expressive natural process.
Sorting:
After harvesting, cherries are carefully inspected and sorted to remove underripe or defective fruit. Additional manual selection is carried out during the early stages of drying to maintain consistency and prevent fermentation irregularities.
Fermentation:
Fermentation occurs naturally within the intact cherry during drying. No water is used at any stage of processing, allowing sugars from the pulp and mucilage to slowly migrate into the bean. This controlled, internal fermentation enhances sweetness, floral aromatics, and fruit transparency while preserving balance.
Drying:
Cherries are placed immediately on African raised beds and dried under the sun for approximately 12–17 days, depending on climatic conditions. Drying continues until around 14% moisture content, after which the coffee is gently finished in mechanical dryers to 11–11.5%. Low heat and high airflow are applied to ensure slow, even drying and structural integrity of the bean.

Here we go. Our very first release from Panama, and we couldn’t be more proud, this coffee truly delivers. It’s exciting, distinctive, and a reminder that Panama has so much more to offer than just Gesha. Panama Geshas are a thing — even a brand by now — and everyone deep into specialty coffee loves them, us included. But how often do you get to experience other varieties from this exceptional origin?
We love Pink Bourbon for its brightness and vibrant grapefruit character. It’s always crisp and juicy, sometimes even tropical and floral. Experiencing this variety grown in one of Panama’s most celebrated terroirs is something special. This is a high-level expression of Pink Bourbon from Finca Hartmann, showcasing both variety and terroir. And don’t be fooled by the fact that it’s a natural process — the cup is remarkably clean, with many attributes you’d normally expect from a washed coffee.
Finca Hartmann hardly needs an introduction. As true pioneers of specialty coffee in Panama, the Hartmann family has been shaping the country’s reputation for decades. With deep respect for nature, meticulous farm management, and a strong experimental mindset, they consistently push quality forward. As a family-run estate, their work is defined by precision, care, and long-term vision — qualities that have earned them widespread recognition and success on the competition stage year after year.
This Pink Bourbon brings everything you’d expect from the variety, interpreted in a distinctly Panamanian way. The natural process adds red-fruit tones, yet the cup remains far from boozy. Instead, it’s clean, bright, and elegant — almost washed-like at times. Expect hibiscus florality, pomegranate-like acidity, and a high, refined sweetness reminiscent of ripe grapefruit. There’s also a pronounced coffee cherry character in the flavor, which makes you wonder why every natural coffee doesn’t taste like the fruit it comes from. From hot to cold, the cup shows lively citric and tartaric acidity, finishing with a lingering, tea-like, floral aftertaste.

Little hint: This coffee is incredibly dense which lets it reach its peak later than usually with our coffees. Be curious and try it as soon as you feel but do not finish it until 3-4 weeks in :)
