ESNAIDER ORTEGA-GOMEZ SIDRA

Processing: Washed  

  • Cherries are picked every 21 days at peak ripeness.
  • They are floated and hand selected to ensure there are no impurities.
  • They are put on raised beds for 14h to have no excess water left.
  • Depulping happens the next morning, after a dry fermentation process for 36h in oak tanks.
  • Those tanks are rinsed four times which floats most of the existing microorganisms away.
  • After that the cherries spend 10h in plastic bags.
  • Cherries are dried for another 20 days fully in the shade (just as a little impression - Esnaider and his co-workers move this coffee 10+ times a day to ensure even drying and its high quality, Esnaider jokingly says their coffees live a better live then they themselves)

This Coffee found its way (just like #014) through Semilla from the Monkaaba cooperative and we loved it from the very first cup.
Monkaaba are a group of smallholders and friends who empowered themselves through Semilla to be independent from big companies sales networks and its price pressure. We are super happy and proud to be able to represent this through such a lovely coffee!
It has all you can expect from a high quality Colombian washed Sidra. Grown on Esnaiders farm „La Esperanza“ (which is only 0.25 acres in size btw) it delivers an overall very clean cup with a crisp citric acidity (turning malic when cooling down) together with a super silky, medium intense body that turns slightly juicy when cooling. It reminds us of green apple all the way together with a beautiful bright florals in the aftertaste.
Those of you who die for high level washed coffee: This is for you. Ah, nevermind. I don’t think there is a coffee enthusiast out there that would not appreciate this one.
