Processing: Carbonic Maceration, Washed

  • Picking:The cherries are harvested at a ripeness exceeding 20° Brix and transported to Campo Hermoso in Quindío, a journey that typically takes up to 48 hours.
  • Sorting:Upon arrival, the coffee undergoes a floating process to ensure quality. The cherries are then immersed in water for two hours to clean and classify them.
  • Fermentation:Next, the cherries undergo an initial anaerobic fermentation for 48 hours, followed by a 72-hour carbonic maceration process. During this stage, the mosto produced by the coffee is recirculated every 12 hours. To enhance the complexity of the cup profile, Edwin blends this mosto with pre-prepared mosto from Gesha and Sidra varieties.
  • Drying: After fermentation, the husk and mucilage are removed through washing, and the coffee is sun-dried for 10 to 15 days, depending on weather conditions.

Flavours:  silky mouthfeel, with a citric acidity and sweetness of candied orange and ginger. complex botanicals of cedar, eucalyptius and mint. silky body with a lingering aftertaste of cacao nibs and sage.

Description

Sudan Rume Hybrid Washed Colombia - yeah, we had the same reaction a few years ago! This coffee was, in a way, the catalyst for liquid dream. We threw it into an Ikawa, and the result was simply mind-blowing.

Now, a few years later, we’re beyond excited to share this incredible coffee from Huila, Colombia, with you. We often say, “This one’s a banger,” and trust us—this Sudan Rume is exactly that.

Grown on El Recalmo and processed at Campo Hermoso, this coffee is nothing short of exceptional. Sudan Rume, originally from East Africa, is notoriously challenging to cultivate but rewards with stunningly bright, citrusy, and ethereal notes. This specific lot was produced by John Flores Noreña, a third-generation coffee farmer in Valle del Cauca, whose farm is part of the Campo Hermoso Project. This initiative provides technical support to farmers, improving harvest and post-harvest processes to reach highly differentiated markets. The project is led by Edwin Noreña, a renowned coffee expert, COE judge, and Q-Grader, known for pushing boundaries in coffee processing.

This Sudan Rume thrives at 1,950m above sea level, where cool temperatures and rich volcanic soils allow for slow cherry maturation, enhancing its complexity. The farm itself spans 36 hectares, focusing on sustainable and innovative practices to elevate cup quality. The coffee is selectively harvested twice a year, in April–May (60%) and October–November (40%), ensuring only the ripest cherries are picked.

The result? A sensory explosion of ginger, intense botanicals, sage, cedar, dried red fruits, and candied orange. The body is silky and round, with a delicate malic acidity, subtle citrus brightness, and a lingering, balanced finish. It’s a coffee that surprises with layers of depth—structured yet elegant, bold yet refined.

This is a true masterpiece from southern Colombia - silky, clean, and outshining many naturals in complexity.
