Processing: Washed 

  • Only fully ripe cherries are selectively harvested to ensure optimal quality.
  • The cherries are washed with treated water and separated by density through flotation.
  • They are briefly submerged in 80°C water for 20 seconds to pasteurize the coffee and promote sugar release.
  • The cherries are pulped using a modified pulper, extracting juices that are used during fermentation.
  • Fermentation lasts five days using the coffee’s own sugars and a small amount of pre-fermented yeast.
  • Drying takes place in mechanical dryers at 38°C for 8–12 days, followed by a stabilization period of 15–30 days in GrainPro bags.

Description

We first had Bourbon Pimienta from Oscar Hernández last year as a natural, and it was already outstanding it even placed 2nd at WCiGS24.

This year, we’re thrilled to share the washed version, which we like even more. The washing process really brings out the variety’s unique traits, giving it a bright, lemonade-like clarity.
Los Nogales and Oscar need little introduction. Their coffees are immediately recognizable on any cupping table, carrying the distinct “Nogales signature.” This year, they upgraded their drying room, which adds consistency to the process, though honestly, they’ve been producing top-tier coffees for years.


The cup itself is complex and lively. The acidity is sparkling, reminiscent of cherry or orange lemonade, balanced by a pleasantly toned sweetness. The body is mostly silky, but when brewed at a tighter ratio, it becomes juicier. It’s intense without ever feeling heavy.
The finish is long, pleasantly herbal, and very refreshing. We labeled it Pink Pepper for the subtle, citric, aromatic note - nothing like black pepper. The flavors are layered: tropical fruit like kiwi and papaya, light spice, a touch of chocolate as it cools, and a faint floral note like orange blossom. Throughout, that sparkling lemonade-like acidity ties everything together beautifully.
This coffee is playful, complex, and endlessly engaging, truly remarkable.

What really stays with you is the finish, long, surprisingly smooth with a herbal note that reminds me of a milky oolong tea.
