Processing details:

Ripe cherries are harvested every three weeks, allowing the plants to rest for two weeks in between. They are then fermented in a tiled tank for 90 hours. After the first fermentation, they are pulped and then being dried with full mulcilage on the parchment for 22 to 25 days. 

We taste: a beautiful symbiosis of stone fruit and floral qualities when hot and changing when cold to bold tropical flavors, reminding us to fresh pineapple and papaya.

Description

Introducing a Bourbon Pimienta from Bella Vista in La Esperanza, San Agustín, Huila. This lot marks the first Bourbon Pimienta harvest within the Monkaaba group and immediately stood out to us for its clarity and vibrancy.
Bourbon Pimienta also often referred to as Bourbon Ají is a still relatively uncommon Colombian variety that many believe to be genetically closer to Ethiopian landraces than traditional Bourbon. What surprised us most, though, is how little the processing dominates the cup. Despite a 90-hour cherry fermentation and honey process, the profile is not ferment-forward at all. Instead, it remains remarkably clean, bright, and transparent, something we honestly did not expect when first tasting the coffee.
The cup leans strongly into tropical fruit, led by notes of pineapple and papaya, supported by a lively and bright acidity structure. What we find especially interesting is how bright and transparent the profile remains (not at all reminiscent of heavier natural coffees with pronounced lactic acidity). Instead, the structure feels clean and lifted, much closer to a refined washed profile.
As the coffee cools, the acidity shifts from more citric qualities toward softer malic characteristics, while the overall profile becomes rounder, more subtle, and increasingly elegant. Delicate floral and herbal notes emerge in the finish, alongside black tea-like qualities at higher extractions, whereas lower extractions emphasize a fresher and more herbal expression.
We roasted this coffee very light to emphasize that balance of vibrancy, clarity, and layered structure over body and intensity. Depending on extraction, it can present sparkling and tea-like or slightly deeper and super juicy. A nicely versitile coffee and therefore very easy to brew :)

Brewing Notes

One little hint on how to approach this coffee: We recommend a coarser grind setting and lower temperatures 90 -92°C to prevent over extraction.
