Description
Description
Introducing a Gesha from Fernando Melgar, grown on his farm Las Flores in Santa Rosa at 1850 masl. This coffee is a pure and elegant expression of Gesha, shaped by high altitude, slow maturation, and careful craftsmanship.
As a little side note which (and I would love to have a discussion with like- or other-minded people): We couldn’t at all tell this coffee comes from a Guatemalan terroir. We could just tell it tastes like a super high level Gesha that could surely be also grown in Panama or wherever.
Leaves the question if terroir is less important then the industry would like and if all producers had the knowledge to grow and process a coffee like if would be be no means no variable, but a smaller one for sure.
But let’s talk about the coffee: Las Flores cool climate and elevation bring clarity and softness to the cup, highlighting exactly what this varietal has to offer.
In the cup, the texture is distinctly velvety and smooth. Red fruits take the lead, ripe cherry, raspberry, and ripe stone fruit supported by a mellow, tartaric acidity that adds lift without sharpness. Subtle floral tones like hibuskus sit quietly in the background, enhancing the overall elegance. The finish is long, clean, and silky, with lingering red fruit sweetness and a soft tea like finish.
A graceful and polished Gesha, emphasizing mouthfeel and harmony as much as aromatic complexity.
Brewing Notes
Brewing Notes
Best brewed with a slightly gentler extraction due to the relatively low density. Using water at 90–92 °Chelps maintain clarity and sweetness. With tighter ratios, the cup presents a dense, candy-like sweetness with ripe raspberry and nectarine notes, while opening the ratio gradually lifts the profile towards hibiscus-like florals and a lighter, more elegant, almost gesha-like expression. A medium-coarse grind and calm, even pours support a clean structure, allowing the cup to move seamlessly from juicy and sweet to floral and refined.
