Processing details:
- This washed Geisha was picked, floated to clear impurities and pulped immediately. It has been fermented in mucilage during 48 hours dry, without water.
- To ensure cup quality and take care of all the volatile aromatics we did a three step drying process in the dry-house “marquesina”.
- Jorge did a fully washed process, to showcase the maximum expression of the variety. When drying he covered the plastic roof with poly-sombra - a net-like black cover to slow down the speed of drying.
- After 5 days he stored the coffee for 24 hours, the same at days 9 and 13. That’s how he extended drying to 15 days, preserving more aromatics and fruity-flavors without getting funky.
We taste: A silky body with a beautiful floral bouquet of lavender and chamomile. Distinctive tangerine flavours and aromas become juicy when chilled, balanced by a bright raspberry acidity.

This is a Geisha that we love for its clarity, floral aromatics and juicy fruit-driven sweetness.
When hot, the cup opens with a beautiful floral bouquet of lavender and chamomile. The texture is silky and elegant, while delicate tangerine notes bring a bright, juicy citrus character. The acidity is lively yet refined, giving the cup a clean and structured profile.
As the temperature drops, the tangerine becomes increasingly juicy and pronounced. At the same time, a bright raspberry acidity emerges, adding a fresh, vibrant layer of red-fruit character. The floral aromatics remain present but become softer and more integrated, while the sweetness continues to build. The texture becomes rounder and silkier as the cup cools.
Further down the cup, the combination of delicate florals, juicy tangerine and bright raspberry acidity becomes especially clear. The coffee remains elegant and transparent, with a silky body and a lively, fruit-driven finish.
Despite the 48-hour dry fermentation in mucilage, there are no obvious fermenty flavours in the cup. Instead, the process contributes to the aromatic intensity, juicy sweetness and vibrant acidity. The slow drying and resting periods help retain these delicate aromatics and fruity flavours, while the washed process keeps the cup clean and defined.
This is a rather "normal" interpretation of a high-end Gesha with a very terroir- and variety-driven profile, for people who love coffees for their subtleties and elegance. It is truly exceptional. Thank you, Jorge, for this outstanding coffee!

We recommend allowing the beans to rest for at least 14 days to 21 days. Peak of flavor will be between week 4 and 6.
We recommend a coarser grind and a ratio between 1:17 to 1:18. Aim for lower extraction to prevent those lovely delicate floral aromas. Stay with your brew time under 3 min - 2 are better!
