    Process: Washed (Anaerobic Fermentation)

    Processing details:

    Ripe cherries are hand-picked, floated, and sorted before pulping. The coffee undergoes a 36-hour anaerobic fermentation at 18°C, with Brix levels of 15–18 and a final pH of 3.8–4.2. It is then washed three times to remove mucilage.

    The coffee is dried in a solar dryer for 15–20 days to 10–10.5% moisture, followed by a one-month resting period in parchment to enhance sweetness, clarity, and complexity before milling.

      We taste: expect an elegant and complex cup with a wonderful bouquet of florales, reminiscent of violets. The Sweetness is like panela with an well integrated and structured acidity like lemonjuce and grapefruit.

      Description

      This Gesha from Manuel Marlo Baca, grown at Finca Pacpa in Roblepampa, is a clear example of how controlled processing and high-elevation cultivation shape both acidity structure and flavour clarity. What a coffee!

      Gesha, as a variety, is known for its elongated seed structure and low yield, but more importantly for its ability to express highly volatile aromatics when grown under slow maturation conditions which we love to much about it (floralllllls). Adding high altitude, extended cherry development allows for increased sugar accumulation and a more defined acidity structure.

      On top this coffee undergoes a carefully managed fermentation followed by washing and slow drying, resulting in a profile that prioritises clarity over intensity. Rather than pushing fermentation character, the process supports a transparent expression of both variety and origin.

      In the cup, the profile evolves distinctly across temperature :

      Hot: pronounced floral aromatics (jasmine, bergamot) with a sharp, citrus-driven acidity, super bright and light
      Warm: sweetness is increasing big time, moving towards rounder soft body with flavors of soft stone fruit, even hits of tropical vibrs due to the controlled fermentation
      Cool: a deeper layerd sweetness reminding us of a light honey, the acidity integrates and softens the finish becomes longer and more tea-like. The bergamot comes back in a rather long finish.

      One little hint on how to approach this coffee: With a compact recipe (like 1:15-16) this shows even more! We prefer it more with a ratio of 1:17 since the intensity is already high.
