Description

A Gesha from Jaime Sanchez, grown at Finca Las Flores in the mountains of Santa Rosa at around 1885 masl. The farm sits in a cool, high-elevation pocket where slow cherry development and careful harvesting shape coffees with remarkable clarity and composure. Jaime and his family have spent years refining their work on the farm, focusing on meticulous picking and clean washed processing to let the character of the variety shine through.

What stood out first was the quality of the Gesha itself. It is precise and elegant with an expressive acidity structure. It also raises the question of how dominant terroir really is once farming and processing reach a very high level of precision. This is exactly why we prefer highlighting producers rather than producing countries. They are responsible for the cup more than anyone else, if not entirely.

In the cup, the coffee is all about finesse. The texture is smooth and silky with a sweetness that reminds us of blossom honey, medjool dates and ripe Saturn peach. It feels unusually dense yet very soft for a Gesha. This is accompanied by a floral finish and a citric acidity reminiscent of ripe lemons, especially as the coffee warms slightly. As it cools, the acidity leans more towards tartaric, giving impressions of green grapes.

As a rather classic profile, we also notice Saturn peach notes throughout. When brewed with a wider ratio, the finish reminds us of roses. At denser ratios we find jasmine and black tea.

If you notice herbal or green characteristics, consider giving the coffee a bit more rest. It is a very dense coffee and, due to its processing, it reaches its peak around three to four weeks after roasting.

One little hint on how to approach this coffee: With a compact recipe (like 1:15-16) this shows even more! We prefer it more with a ratio of 1:17 since the intensity is already high.
