Process: fermented washed 

Processing details:

After sorting this coffee got a 24h dry fermentation stage in cheery. Then depulped and left to ferment in a container with water for 72 hours. After washing, the parchment was dried on raised beds for 18-20 days. 

 

We taste: rhubarb compote, grape juice, blackcurrant, gooseberry, lemon tarte, elderflower, brown sugar.

Description

This Pacamara is big, vibrant and expressive. El Quebradon is run by three brothers, José, Miguel Ángel and Jesús Burbano.

The style of this coffee is surprisingly Kenya-Like, although the flavour itself is not quite so. When hot, the cup is immediately vibrant, with a deep cassis character that strongly reminds us of a good Kenyan coffee. Alongside this comes a bright, lively acidity, with gooseberry giving the cup a slightly tart and juicy edge. The mouthfeel is thick and syrupy, giving the fruit a lot of depth and persistence.

As it cools, the gooseberry becomes clearer and green apple starts to appear. The cassis remains underneath, adding depth, while the acidity becomes more defined and refreshing. The syrupy texture keeps the cup dense and full without making it feel heavy.

Further down, brown sugar sweetness comes through and rounds everything out. The Pacamara character is still very much there, bold and intense, but the fruit and acidity keep it lively.

That is something we don't think we have ever experienced before. Truly a coffee to remember. Damn.

Brewing Notes

This coffee is easy to brew. We recommend allowing the beans to rest for at least 14 days to 21 days from the roast date to reach peak flavor. 

We recommend a coarser grind and a ratio between 1:16 to 1:17. Aim for lower extraction to prevent those lovely delicate floral aromas
