Granja Paraiso 92 is widely known as the farm run by Wilton Benitez and his team, a project that has reshaped how modern coffee processing is understood. A former chemical engineer, Benitez is often regarded as the godfather of inoculated fermentation, pushing boundaries with scientific precision and intent. At Paraiso 92, every coffee exists in a constant balancing act between variety and processing, where flavour expression is carefully guided rather than dominated. We are genuinely excited to present three outstanding varieties - Orangen Bourbon, Sidra, and Gesha - curated together in this box.
All three coffees are washed and undergo two anaerobic fermentation phases, each inoculated with different yeast cultures. The result is a collection that highlights clarity, structure, and variety character, while showcasing the cutting edge of controlled fermentation.
The Orange Bourbon has been used multiple times on the Brewers Cup stage around the world and for good reason. It delivers an incredible, almost crystalline sweetness, lifted by vibrant, juicy acidity. The cup is layered and expressive, unfolding with remarkable depth as it cools. What truly sets it apart is the aftertaste: long, intense, and unapologetically complex. It is the kind of finish that stays with you long after the cup is empty. A coffee that is not only memorable, but genuinely hard to forget.
Coming to the Gesha, this cultivated strain from Panamanian Gesha genetics is all about elegance and tactility. The texture is remarkably smooth, silky, and deeply layered, carrying flavour with quiet confidence rather than force. It is the kind of coffee that completely disarms you before you know it, your jaw is on the floor faster than you can take the next sip. There is a calm precision to the cup, with clarity, balance, and depth unfolding effortlessly. No surprise that we are keeping a portion tucked away in our freezer for the next competition session. Boom - the grand finale: Bourbon Sidra. When we first tasted this coffee, we honestly thought it might not be our type. But it didn’t take long before it completely won us over and stood out on its own terms. Expect a crisp, lively acidity wrapped in generous tropical sweetness. What really makes it special are the distinctive herbal aromatics, adding depth and a character that feels both unexpected and refined. It is a coffee that grows on you with every sip, revealing more the longer you spend with it. A true must-try and exactly why it earned its place in this box.
