- Ripe cherries are selectively harvested and floated to remove defects.
- Depending on the harvest period, the cherries undergo oxidation in cherry for two nights (resting phase).
- The coffee is then depulped and dry fermented in open tanks without water for 48 to 72 hours, depending on ambient temperature.
- After fermentation, the coffee is fully washed.
- Drying begins in full sun for the first few days and continues under shade thereafter.
- Total drying time ranges between 11 and 14 days.

Description
This coffee is very likely the only Sidra currently growing in Peru. Around eight years ago, Thomas Pingen from Red Beetle Coffee Lab visited Clever Acosta and brought Sidra seeds, along with a few other rare varieties from Colombia. At the time, Clever was intentionally looking to move beyond traditional cultivars and start working with uncommon varieties to position his farm more clearly for a differentiated market. This Sidra planting is the result of that decision and it pays off!
Sidra is a relatively young variety, best known from Ecuador and Colombia, and is often associated with high cup clarity, elevated sweetness, and a profile that bridges Central American structure with Ethiopian-like aromatics. Genetically, it is believed to be closely linked to Ethiopian landraces, which often shows in its floral character and elegant acidity, especially when washed.
Today, several years after planting, we are tasting only the third harvest from these trees. The yield is still very small, but the focus is already clear: expressing Sidra through Peruvian terroir rather than forcing a generic profile.
In the cup, you can clearly taste both elements the Peruvian growing conditions and the classic Sidra profile. The coffee is very clean and sweet. Expect a smooth, citric acidity supported by notes of green apple and stone fruit, alongside pronounced floral characteristics and a vanilla like finish. The balance and precision of the cup reflect both the potential of the variety and Clever Acosta’s careful approach to farming and processing.
An impressive result from a young planting, and a strong indicator of what this Sidra and Clever’s work can become in the coming years.
