Processing: anaerobic washed
- Harvesting ripe cherries after 28 days of ripening.
- Floating and re-selecting only ripe cherries, then fermenting in bags for 60 hours.
- Pulping and fermentation for an additional 100 hours in vats with water and 700 grams of star anise per 200kg of coffee (anaerobic dry fermentation).
- Washing after 160 hours of fermentation with a small amount of water to retain some mucilage.
- Sun-drying for 15 consecutive days, covering at night to prevent moisture from entering, as the relative humidity at night exceeds 95%.
- Cupping and storage for 30 days for stabilization, then packaging in Grainpro bags.

Description
This is our second coffee from Wilder Lazo in Huila, Colombia. We previously released a natural Chiroso from him, which we really enjoyed, so we were curious to try this lot as well.
To be honest, we’re usually a bit sceptical about co-ferments. They can easily overpower the character of a coffee. But this one felt different. The processing is subtle and doesn’t dominate the cup. If you tasted it blind, you might not immediately guess it’s a co-ferment.
Sidra is a variety often appreciated for its floral character, sweetness, and complexity. In this coffee, those qualities come through in a more restrained and balanced way.
In the cup, we get floral notes, peach, green apple, white grape, and a clean acidity. There are also light herbal notes reminding us of anise, chamomile, lavender, or fennel.
We roasted this coffee lightly to keep it clean and transparent. With a higher brew ratio, it comes across very crisp and tea-like. Using a tighter ratio brings more sweetness, a fuller texture, and a finish that reminds us of black tea.
This coffee was a bit outside our usual preference, but we ended up enjoying it a lot. It feels like a nice middle ground between a clean washed profile and something a little more expressive.
