Processing details:

Each producer follows their own processing methods. Cherries are picked every 21 days at peak ripeness, then floated and hand-sorted to remove defects before being placed on raised beds to drain excess water. Around 14 hours later, the coffee is de-pulped and left to dry ferment for an average of 36 hours in oak tanks. It is then rinsed four times and left to drain in plastic bags for a further 10 hours. After this, the coffee is dried in the shade for 20 days.

We taste: Blood Orange, Black Tea, Cola, hints of currants.

Description


This SL28 comes from Monkaaba in Colombia and through Semilla. A project that we love not only the expressive and vibrant coffees form (literally all coffees they produce are outstanding).
This coffee grows at high elevation in a lush, mountainous environment, where cool temperatures and slow cherry maturation help build complexity and clarity in the cup. Monkaaba’s approach is very detail-oriented, with a strong focus on selective picking and careful processing to bring out a clean yet expressive profiles.
In the cup, it leans bright and structured with notes of red currant, clementine and a touch of florals in the finish. There’s a super juicy acidity, think blood orange and red currant, balanced by a soft sweetness and a smooth, silky body. You may remember the #31 from late 2025 from us. This is from the 2nd harvest of 2025, though since it was much less in Volume Pastor Ordonez combined it with Augusto Ortegas (like the Sidra #27), Irma Lopez and Olga Ortega SL28s giving us a slightly different profile overall yet non to muss.
All in all we like it so much since it is expressive like an orange lemonade without being overwhelming, and shows a nice balance between vibrancy and elegance.

Brewing Notes

One little hint on how to approach this coffee: With a compact recipe (like 1:15-16) this shows even more! We prefer it more with a ratio of 1:17 since the intensity is already high.
