    Processing: Washed

    • Ripe cherries are selectively harvested and floated to remove defects.
    • Depending on the harvest period, the cherries undergo oxidation in cherry for two nights (resting phase).
    • The coffee is then depulped and dry fermented in open tanks without water for 48 to 72 hours, depending on ambient temperature.
    • After fermentation, the coffee is fully washed.
    • Drying begins in full sun for the first few days and continues under shade thereafter.
    • Total drying time ranges between 11 and 14 days.

      Description

      This coffee comes from Sierra Mazateca in Oaxaca, Mexico, grown by Renato Martinez on old Typica trees at 1,700–1,850 masl. The terrain here is steep and remote, home to indigenous communities. We got this coffee through our friend Thomas from Red Beetle Coffee lab as the lot was super small yet outstanding. It shows the true potential of the old varieties in terms of cup quality. The Mazateca has a hell lot to offer and is highly underestimated due to various reasons.
      In the cup, we have lots of Kenia vibes with very high clarity and an exceptional structure. You’ll find notes of raspberry-jam, cassis, light caramel, hibiscus and with a well integrated lemon zest acidity. The body is dense and creamy without being heavy, and the overall character is very present and comforting. The vibrant fruit forward character is the result of the oxidation in open tanks and is similar style wise to what happens in Columbias washed coffees a lot. In addition the intense sweetness and easy to drink body is super typical for the Mazatecan terroir we believe as well is the crispness.
